Most modern cars are SIM-enabled and are constantly sending data back to the mothership. But even those that aren’t will still collect data locally and that data will be collected when you send the car to an “official/licenced/authorized” repair shop.

Kvaesitso launcher on my phone works fine with internet access cut off (which is a thing you can do on GrapheneOS). Weather, calendar, etc. still work because it integrates with external apps for all that. It’s also FOSS.

That’s fair, if Amazon gets your real name and address anyways, the privacy protection of paying with Monero isn’t as big of a deal.
I pay for my VPN with Monero, I pay my mobile carrier (VoIP + data eSIM) with Monero, and the last time I travelled internationally I also got a data eSIM for that with Monero. Every so often I need to get through a Google “give us a phone number” prompt, and the one-time SMS OTP service I use is also paid with Monero. There’s also stores where you can buy gift cards for real-world things (Amazon etc.) with Monero.
I remember that – the guy provided no real evidence. I wouldn’t trust it that easily given the number of groups who hate that things like Graphene exist.
