Since tech illiterate people don’t really care what’s under the hood as long as it works, I would choose anything with Cinnamon desktop: Gnome is a little alien for newcomers, KDE and XFCE are far too easy to screw up if you don’t know what you’re doing.
If Mint doesn’t work well with you I would suggest either LMDE, stock Debian or the Fedora Cinnamon spin (in this order of priority)

Debian-head here, daily driving it for the last 5 years. I distrohopped a lot before but Debian made me stay, mainly because of its stability and the fact that it’s community driven.
It’s getting harder everyday making your needs fit your ethics, but this is one of the few cases and it makes me feel good with my choices.

I’d say Gnome, since I’m so used to it that I feel it doesn’t get in the way of the things I’m doing.
Because that would be my aim: something that doesn’t interfere with the work I am doing.

If you need a FOSS, cross platform GUI for bootable USB sticks, Raspberry Pi Imager is a really good solution.
It is mainly used to flash SD cards for RPIs, but also you can burn any ISO on any support with it.
